Ingredients

  • 1 Alimenta Salento Puccia
  • 80 g high-quality cooked ham (prosciutto cotto)
  • 50 g cream cheese (such as Philadelphia)
  • 1/2 medium zucchini
  • 1/2 red or yellow bell pepper
  • 2 tbsp pistachio sauce or pesto
  • 1 tsp chopped/crushed pistachios (granella di pistacchio)
  • Extra virgin olive oil to taste
  • Salt and black pepper to taste

Traditionally baked in wood-fired ovens at extremely high temperatures to allow the dough to rise and create its classic, fragrant hollow pocket, the puccia is the undisputed queen of Apulian street food. In this version, the Puccia alla Salentina Alimenta welcomes the velvety contrast of Philadelphia and the sweetness of cooked ham, balanced by the rustic notes of grilled peppers and zucchini. The master touch? A drizzle of pistachio sauce that transforms a quick snack into a true gourmet experience.

Wash, slice, and grill the zucchini and peppers on a piping hot griddle, seasoning them with olive oil and salt.

Heat the Puccia in the oven or on a griddle for about 5 minutes until crispy on the outside.

Slice the Puccia in half, spread Philadelphia on the base, arrange the grilled vegetables and cooked ham, then top with the pistachio sauce.

Preparation

Prepare the vegetables: Thoroughly wash the half zucchini and half bell pepper. Trim the ends of the zucchini and slice it lengthwise into thin slices (about 3–4 mm thick). Remove the seeds and inner white ribs from the pepper, then cut it into wide strips.

Grill: Heat a cast-iron griddle or a non-stick pan over high heat. When piping hot, place the zucchini slices and pepper strips on top. Cook for about 2–3 minutes per side until the signature dark grill marks appear and the vegetables are tender yet firm. Transfer to a plate, drizzle with extra virgin olive oil, a pinch of salt, and a dash of black pepper.

Heat the bread: Preheat a conventional oven to 200°C (390°F) or heat a griddle. Insert the Puccia Salentina Alimenta and heat for about 5 minutes. This step is essential to restore the crispy texture of the crust while keeping the inside soft.

Assemble: Using a serrated knife, slice the puccia along the side to open it like a book. Generously spread the Philadelphia over the warm base so the cream cheese softens slightly. Layer the grilled zucchini and peppers, lay the hand-shredded cooked ham over them, and finish by drizzling the pistachio sauce on top. For an extra crunch, sprinkle with chopped pistachios.

Serve: Close the puccia, pressing down gently with the palm of your hand to bring the ingredients together, and serve immediately while hot.
