Fornarina Romagnola Style with Mortadella, Mustard, Lettuce, and Pistachio Oil
It takes just 10 minutes and a warm Alimenta Fornarina Romagnola to bring something delicious to the table: stuff it with mortadella, crisp lettuce, a smear of mustard, and a pistachio oil that makes all the difference. Nothing else is needed. It’s the classic quick-to-make Fornarina that, thanks to two or three smart touches, is anything but boring.

- 1 Alimenta Fornarina
- 100 g sliced mortadella
- 1 small head of lettuce
- 1 tsp mild mustard
- 1 tbsp pistachio paste
- 3 tbsp extra virgin olive oil
- Salt, to taste
- Chopped pistachios (optional)

Preheat the oven to 200°C (390°F) and warm the Fornarina for about 5 minutes—just enough time for it to become golden and crispy. Meanwhile, wash the lettuce, dry it thoroughly, and cut it into thin strips. Season it with one tablespoon of olive oil, a pinch of salt, and the mustard, then toss well.
In a small bowl, mix the pistachio paste with the remaining two tablespoons of olive oil, stirring until you get a smooth cream.
Once the Fornarina is ready, slice it open and layer in the mortadella (keep the slices soft and draped rather than pressing them down) and the seasoned lettuce. Drizzle the pistachio oil evenly over the filling.
For an extra touch, sprinkle with chopped pistachios and add a drizzle of raw olive oil right before serving. Enjoy immediately while still warm to get the full contrast between the crispy base and soft filling.
