Heat the focacciotto in a hot oven at 200°C for 5-7 minutes until fragrant and golden, then serve at the table piping hot.

Preparing the confit tomatoes

Wash the tomatoes, cut them in half and arrange them cut-side up on a baking tray lined with parchment paper. Season with salt, pepper, a pinch of brown sugar to create a lovely caramelization on each half, and a generous drizzle of extra virgin olive oil. Bake at 140°C for about 60-90 minutes, until dehydrated and lightly caramelized.
