First, dedicate a few minutes to preparing the vegetables. Wash the leek carefully under cold running water to remove any soil residue, discard the final root and the toughest green leaves. Cut the tender part into thin rings of about one millimeter.
In a non-stick pan or a wok, heat a tablespoon of extra virgin olive oil. Add the leeks and a pinch of salt; let them stew over low heat for about 5-7 minutes, stirring occasionally until they are soft, sweet, and lightly caramelized. If necessary, add a tablespoon of water to prevent them from burning. Once ready, set them aside.
Reduce the chicken breast into bite-sized pieces or regular strips, perfect for absorbing the condiments at best. In the same very hot pan, pour a drizzle of oil and add the fresh grated ginger to release its aromas. Add the chicken and brown it over high heat for 4-5 minutes, turning it until it forms an inviting outer crust. Pour in the soy sauce (and a teaspoon of honey if you desire a sweet and sour note) and let it reduce for a couple of minutes, until you get a thick, shiny, and syrupy cooking sauce. Reconnect the leeks to the chicken in the pan and mix to blend the flavors well.
Take the Alimenta Rustic Sandwich and heat it on a very hot griddle or in a preheated oven at 200°C for about 5 minutes, until you obtain a visibly crispy crust.
Remove the sandwich from the oven and cut it in half. Fill it by abundantly placing the sautéed chicken and glazed leeks. Sprinkle the surface with a shower of toasted sesame seeds for an extra crunchy note and close the sandwich. Serve it immediately, piping hot.
