Ingredients

  • 2 Alimenta Bruschette
  • 80 g robiola cheese
  • 1 celery stalk
  • ½ small fennel bulb
  • approx. 20 g walnuts
  • Juice of ½ lemon
  • Extra virgin olive oil
  • Salt, to taste

Toast the bruschette in a skillet, on a grill, or in a toaster until golden and crispy

Whip the robiola with a fork (and a drizzle of olive oil) until smooth and soft

Slice the fennel and celery thinly, then season with lemon juice, olive oil, and salt

Spread the robiola over the warm bread, top with the vegetables, finish with the crumbled walnuts, and serve immediately

Instructions

Toast the Alimenta bruschette in a skillet, on a grill pan, or in a toaster until golden and crispy on the outside. The heat will bring out the bread’s full fragrance and rich texture.

Meanwhile, place the robiola in a bowl and whip it with a fork until creamy and spreadable. For an even smoother texture, stir in a light drizzle of extra virgin olive oil.

Wash the celery and fennel, then slice them very thinly to keep them fresh and crunchy. Toss the vegetables with the lemon juice, a drizzle of extra virgin olive oil, and a pinch of salt, mixing gently to coat evenly.

Once the bruschette are ready, let them cool slightly, then spread a generous layer of the creamy robiola over each slice. Top with the seasoned vegetables for a fresh, rich filling, and finish with the crumbled walnuts for an added crunchy contrast.
