White wholewheat pinsa served with creamed purple potatoes


  • Pinsa Integrale (Wholewheat Pinsa) – white base
  • Extra virgin olive oil
  • Gentilina lettuce
  • Rosemary flowers
  • Smoked salmon
  • Herb-flavoured soft cheese spread
  • Wild fennel
  • Pickled gherkins
  • Purple potatoes


  • 1 Bake the Pinsa Gourmet con Farina Integrale (Pinsa Gourmet with Wholewheat Flour) on a wire rack in a ventilated oven for 7 minutes at 200°C.
  • 2 Top the cooked Pinsa with the cheese spread, the gentilina lettuce leaves and the smoked salmon slices. Drizzle with extra virgin olive oil.
  • 3 Add a few sprigs of wild fennel, the rosemary flowers and the pickled gherkins cut in half.
  • 4 Finally, sprinkle the purple potato (previously boiled and frozen) over the Pinsa.
